Easter Egg Cupcakes





How pretty?  Polka dots and pastels for Easter cupcakes.

So, now that I'm blogging again, I thought it would be nice to share one of my favourite cupcake recipes over the summer, with a bit of an Easter twist... Don't these just look  super cute? 






For the cupcakes you will need:

1 1/2 cups of self raising flour
1/2 cup of butter
1 cup sugar
2 teaspoons of vanilla essence
2 egg whites
3/4 cup of milk
1/2 teaspoon salt
1 cup chocolate chips

First, preheat the oven to 180˚C and pop some cupcake cases in your cupcake tins.
In a large bowl, cream togeather the butter and sugar, then gradually add the egg whites and vanilla essence. Now add the flour to your creamed butter mixture and stir until just combined. Slowly stir in the milk and add the chocolate chips. Spoon the batter evenly into the cases and bake for 20 minutes or until golden brown. Allow to cool for a few minutes on a wire rack, before decorating.





For the frosting you will need:

2 cups of icing sugar
1 cup of butter
1 teaspoon of vanilla essence
1 teaspoon of pink food colouring


Toppings:

Cadbury mini eggs
Desiccated coconut

While the cupcakes are cooling, make the frosting.
Cream the butter in a large bowl, until smooth, gradually adding the icing sugar and continue to cream until light and fluffy. Add the vanilla essence. Now add a drop of pink food colouring, add more if you want a darker pink...mix well.

Spoon the frosting into a piping bag, fitted with a medium star nozzle. I piped half of the batch, piping from the outside circling to the centre, while I piped the rest with star droplets. 
I then topped each cupcake with three Cadbury Mini Eggs and a sprinkle of  desiccated coconut!

  4. There's something about Easter that makes us just want to bake! These are so cute, love the dedicated coconut idea too. Oh and the mini eggs! I go through a bag of those most days. 🐝😘😍
