Ginger Bread Biscuits






I don't think there are many things that screams Christmas more than the smell of ginger bread biscuits baking in the oven. Especially when curled up on the sofa watching a Christmas film and drinking  hot chocolate or a glass of milk. These biscuits are so easy to make and practically fail proof and best of all, super yummy. It just isn't Christmas without them. 


For the biscuits you will need: 


1 cup granulated sugar
½ cup brown sugar 
1 cup margarine, softened
3 tablespoons molasses
1 egg
2 tablespoons milk  
3 1/4 cups all-purpose flour
2 teaspoons baking soda
2 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground ginger
1/2 teaspoon salt
1/2 teaspoon ground nutmeg  
1/2 teaspoon ground cloves

Method: 

First preheat your oven to 180°C.
Place the granulated sugar, brown sugar, butter and molasses in a large bowl and mix well. Stir in the egg and milk. Now sift in flour, baking soda, cinnamon, ginger, salt, nutmeg and cloves.
Cover the dough with cling wrap and refrigerate for about 1 hour or until firm.
Roll dough on floured non-stick surface and cut into Christmas shapes with cookie-cutters and place on baking sheets, bake for 6 - 7 min. 
Once out the oven remove from baking sheets and place on a cooling rack. Let cool to room temperature.
Now comes the fun part, the decorating...



For the royal icing you will need:


3 large egg whites
4 cups of icing sugar
1 teaspoon of vanilla essence

Method:

Place egg whites and vanilla essence in a mixing bowl and whisk until frothy.
Gradually add sifted icing sugar and whisk until you are able to make firm glossy peaks.
Place in a piping bag and start decorating.
