Quick and Easy Banana Bread




When I'm trying to stay away from junk food and eat healthier, one of the most difficult things for me to stay away from is cakes and biscuits. I am such a snacker and would snack on yummy cup cakes and biscuits (definitely Oreo's) all day if I could, but that wouldn't do me or my waistline any good.

So, when I find that the craving is just too much and I need something sweet, but still kinda healthy, my go-to recipe is banana bread.  It is so quick and easy to make and sooo yummy!




To make my banana bread, you will need:

140g butter, softened

140g caster sugar

2 eggs, beaten

140g self-raising flour

1 tsp baking powder

1 tsp vanilla essence

1 cup desiccated coconut

2-3 very ripe bananas, mashed


Method 

Preheat oven to 180 degrees C and butter the loaf tin, before lining the base and sides with baking paper.

Cream the butter and sugar until light and fluffy, before adding the eggs.

Fold in the flour, baking powder and desiccated coconut, little by little and then the bananas and vanilla essence.

Pour into the tin and bake for about 30 minutes.

Cool in tin for 10 minutes, before placing on a wire rack.
