My Cranberry Cookie Recipe




There is nothing that I enjoy more than baking for family and friends, especially making Cranberry cookies, as it's not only pretty with the bright red and so easy to make, but also absolutely delicious! I made a batch this weekend for my mom and I to enjoy during our "catch-up" chat. 

To make my cookies, you will need: 

2  1/4 cups of flour 

pinch of salt 

1 cup of butter (softened)

1/2 cup of sugar 

1 egg yolk 

1 teaspoon of almond extract

3/4 cup of oats (optional)

100g dried Cranberries

Method

Start by setting your oven at 180 degrees Celsius.
Sift flour and salt in a separate bowl.
Mix together the butter and sugar until it is smooth and creamy.
Now add the egg yolk and almond extract to the butter/sugar mixture.
Add the flour, salt, oats (I usually make half the batch with oats and half without) and Cranberries.
If the mixture is a bit dry, add a dash of milk.
Next, roll the dough into medium sized balls and place on a baking tray (I usually cover the baking tray with tinfoil - not a fan of scrubbing afterwards
Press the balls of dough with a fork and pop in the oven for 12 min. or till golden brown.

Finally, enjoy the delicious, warm and fruity cookies with a nice cup of tea or coffee (my preferred option).
